Plant-Based, SIBO-Friendly Creamy Tomato Dahl


Simple, Tasty & Gentle on your Gut

SIBO meal plans can feel daunting and super restrictive with most consisting of meat and simple, SIBO-friendly vegetables. This isn't very helpful if you are eating predominantly plant-based and although the meal plans are designed to be short-term I remember feeling daunted by the limited plant-based options.


After experimenting with what I could eat I developed a few recipes that I came to love and still make when I feel like something gentle on my gut. This super simple, delicious, creamy tomato dahl is one of them.


It ticks so many boxes: It is a one-pan wonder, is easy, quick, cheap, uses minimal ingredients, is plant-based and SIBO-friendly AND DELICIOUS. The sweet and acidic tomatoes are perfectly balanced by warming spices and creamy coconut. Even better when topped with a zing of lime and some fresh herbs.


Plant-Based, SIBO-Friendly Creamy Tomato Dahl

Ingredients:

  • 1 Cup dried red lentils

  • 4 Ripe truss tomatoes, diced.

  • 1 Tbsp Olive oil

  • 1 Tbsp Grated ginger

  • 3 Tsp curry powder (I used an Australian Yellow Bush Curry Powder)

  • 1/3 cup coconut cream

  • 1 cup long-grain rice

  • Salt & Pepper to taste


Method:

Directions should always be short and to the point.

  1. Soak 1 cup of red lentils in enough water to cover for at least 3 hours before cooking.

  2. Drain lentils, rinse and set aside.

  3. Heat oil in a non-stick pan (I used my cast iron crock pot) add grated ginger and curry powder and gently fry until fragrant. Add diced tomatoes and fry until they begin to fall apart.

  4. Add the rinsed lentils to the pan and mix through the tomatoes and spices.

  5. Add 2 cups of water and bring to a boil. Reduce to a simmer and allow to cook for 20-30 minutes.

  6. Add coconut cream and salt and pepper to taste, stirring to combine.

  7. Prepare long-grain rice as per packet instructions.

  8. Serve Dahl on rice with a squeeze of lime, salt, pepper and fresh coriander. If you are not currently treating SIBO I love a dollop of coconut yoghurt on top.
